This simple recipe is quick, easy, delicious and healthy. Not to mention you are left with only a single prep pan to wash. It also lends itself to modifications for a variety of flavors. Makes 3-4 vegetarian adult servings.
1 onion
1 large head of broccoli
2 sliced bell peppers
1 large thinly sliced red potatoes
1 1/2 quartered Brussel spouts
Sliced garlic to taste (we used 4 cloves)
Italian Season packet (Alternative would be French Onion Soup mix)
Fresh lemon juice
Fresh grated Parmesan cheese
- Set oven to High Broil (500 degrees)
- Oil sheet pan well
- Rough chop the veggies
- Spread evenly on the pan
- Drizzle with a little more oil
- Sprinkle with half packet of Italian seasoning mix
- Broil for approximately 5 minutes looking for charring
- Mix
- Return to the oven 3-5 minutes more or until charred to taste
- Sprinkle with Parmesan cheese and juice of half a lemon to taste
- Serve with brown rice or top with chickpeas
Modify by adding sliced smoked sausage to veg before baking, replace seasoning packet, lemon and Parmesan cheese with 3-4 tablespoons barbecue sauce.
